Sofrito:
Sofrito is a Latin American and Carribean preparation which is intended for later use in a wide variety of recipes. It is very basic in its ingredients which are sauteed and then preserved for later use.
There are many variants of Sofritos, including Mediterranean variants. These variants go by many different names, having different ingredients, but ultimately, those ingredients are fried or sauteed in oils and preserved to be used as a base ingredient in other meals.
This recipe is based upon South American variants and uses a basic ingredient content.
NOTE: The name Sofrito also applies to certain meals and those should not be confused with the Sofrito food preparation as described here.
Ingredients:
1) Garlic - 1 Clove
2) Scallion - 4 to 5
3) Red Fresno Pepper - 1 to 2
4) Anneheim Pepper - 1
5) Roma Tomato - 1
6) Fresh Cilantro 1/8 Cup
7) Olive Oil - Cover Bottom of Pan
NOTE: For a milder Sofrito, use Red and Green Bell Peppers.
NOTE: The above ingredients will produce about 6 to 8 Oz. Sofrito.
Procedure:
NOTE: Very easy to make.
1) Dice up Garlic, Scallion, Red Pepper, Anneheim Pepper and Roma Tomato.
2) Chop up the Cilantro.
3) In a Pan, pour in Olive Oil and add the other ingredients.
4) Heat and Saute' until the ingredients begin to soften and change color.
5) Spoon the Sofrito in a covered jar and let stand for an hour.
6) Let stand till cool.
7) Refrigerate for later use.
