This is a very easy dish to make but the results are luxurious. Sweet crabmeat, creamy mascarpone and that inimitable taste of saffron. For a creamier sauce you could use more mascarpone.

Ingredients (serves 1)
70g spaghetti
Pinch of saffron threads
60g crabmeat (white or mix if white and brown)
2 heaped tbsp mascarpone
White pepper
Salt to taste

Method
  1. Soak the saffron in a little boiling water for ten minutes.
  2. Cook the spaghetti to your liking, in boiling salted water.
  3. In a large bowl, mix together the crabmeat, mascarpone and the saffron with its soaking water.
  4. When the spaghetti is cooked add a tablespoon of the pasta cooking water to the crab mix.
  5. Drain the spaghetti and add the the crab mix in the bowl, turning to coat well.
