After, Elizabeth had told me of her gastro adventure in El Puerto de Santa Maria, Cadiz, Andalusia, I had decided to provide her with this récipe, which she raved about ..

Spanish Fish & Shellfish Soup & Saffron ( Sopa de Pescado al Azafran ) ..

1 Kilo of firm White fish ( Grouper or Cod for example with heads for the broth ) sliced and head beheaded .. One can use frozen fish or shellfish broth ..
500 Ml. Dry White Wine
1 large onion minced ( I use 2 shallots )
1 large carrot ( peeled and diced )
1 celery stalk diced finely
1 bay leaf
6 black peppercorns
50 Grams of French or French style butter
20 grams of Bio all purpose flour or 1 large potato to thicken the soup
250 grams of White fish diced (without bones )
250 grams of prawns
10 fresh mussels
10 fresh clams
12 sea scallops
If you select to use the flour, you shall require some cream
10 threads of Saffron ( soak in hot wáter and reserve in liquid for the fish stock or broth )

1) The key is to prepare the fish or shellfish or combo of broth with 750 ml. of wáter .. Strain the bones and fish skins etcetra ..
2) Combine the fish free of bones, the veggies and the saffron with the liquid at a slow low flame simmer with the transparent broth 20 to 25 minutes .. Adjust salt .. Add the wine.
3) Peel the potato and diced very finely .. ( I do not use the cream & flour & butter method to créate a melted butter flour roux ) .. and boil apart ..
4) Drain the potato, and dice and add to the broth.
5) Now strain the broth of the fish .
6) With a stand up mixer, combine the potato with the broth ..
7) Re put all the fish back in the large saucepan & re heat for 2 to 3 minutes.
8) Add the sea scallops and prawns last and the mussels and clams ..
9) When the shells open, voila - done ..
10) Serve steeping hot into bowls with Crusty Rustic Country bread and serve with chilled White wine or Sparkling wine or Sherry ..
