Recipe Spiced Pork Chop with Crushed Sweet Potato

(A Gordon Ramsay Recipe)

Ingredients

  • 4 pork loin chops
    1/2 - 1 tsp mild chilli powder
    1 tsp paprika
    2 tbsp olive oil
    a few springs of thyme
    4 garlic cloves (lightly smashed)
    5-6 star anise, lightly smashed
    1 tsp coriander seeds, lightly crushed

Directions

Cut off the rind and excess fat around the pork chops. Mix the chilli powder, paprika, and some salt and pepper with the olive oil in a wide baking dish. Add the thyme, garlic, star anise and coriander seeds. Add the pork chops and turn to coat. Cover and marinate for at least 30 minutes, preferably in the refrigerator overnight.

Heat the oven to 180 deg C. Bake the pork chops, uncovered for about 15 minutes until the meat is just firm when lightly pressed.

Season, and serve with crushed sweet potatoes and buttered leeks.

Very lovely porc chop dish ..

We like Gordon Ramsy´s Book, " 365 Menus " or a similar title .. I am not home to look ..

We adore his Beef Wellington ! It is an awesome delicacy .. My mom prepares it sometimes for The Ephipany on January 6th - The 3 Wise Men or The 3 Kings as translated from Spanish ..
