Ciao a tutti,

Usual way for make filled pasta Ravioli Tortellini etc is boil si this work but I find some filling work better when steaming this include seafoods, and a ravioli I make with whole egg yolk filling. Pasta come out very soft and tender also filling keep texture and tastes as we all know very easy over cook seafood. I use three levels Chinese bamboo steamer.

Do you line the steamers with anything? I usually use parchment paper squares or cabbage/lettuce leaves when steaming something.
