Recipe Strawberry & cream pancake stacks

Felt like making a treat to celebrate the strawberry season.. It's a lovely light dessert.

For 12 mini pancakes:
200 g of fresh cheese, preferably kwark or quark but labneh or mascarpone can work too.
4 eggs
50 g of plain flour
1/2 tsp of vanilla powder
Pinch of salt

Filling:
50 g mascarpone
50 g strawberry jam
Optional 6 strawberries and powdered sugar for garnish
Butter for frying

1) Beat the eggs, quark, vanilla and flour with a pinch of salt into a glossy batter. It should look like this:

2) Then heat a pan on medium heat and melt some butter in it. When the butter sizzles add a few tablespoons of batter like this:

3) Leave until the surface is smooth and little bubbles appear, then turn around quickly. Remove from heat when the pancakes are golden brown. They should look like this:

4) Then make the filling by beating together the mascarpone and strawberry jam.
Spread on a pancake, top with another pancake and spread on there again until you have a stack with 4 layers. Then decorate with sliced strawberries and sugar if you wish and serve!
