Keep in mind that I am lazy.  I have no interest in a long, drawn out canning process.  I have a professional grade vacuum sealer. 
Peppers are popping. Sweet bananas - prolific
jalapenos - 2-3-4 every other day
Green beans - AKA snap beans, string beans - first harvest tomorrow - lots
I am thinking about scalding the beans then freezing.
The peppers I am thinking about slicing and dicing then freezing.
Any other ideas?
