Sweet Potato Slippers

Ingredients:

1) Sweet potato, medium sized - 1/2
2) Cucumber - 1/4
3) Radishes, medium - 2
4) Sour Cream - 2 tblspns.
5) Mustard seed, yellow - 1 tspn.
6) Mustard seed, black - 1 tspn.


Procedure:

1) Cut a medium sweet potato in half and store one half away.
2) Using a Y peeler, shave off the skin.
3) Using a chef knife, shave up the sweet potato into thin slippers.
4) In a food processor, blend cucumber, radishes and sour cream.
5) Remove the sauce to a bowl and stir in the mustard seeds.
6) Deep fry the sweet potato slippers until browned.

NOTE: Preheat the oil to 350F before beginning the fry.

7) Heat the sauce to 175F.
8) Spread the slippers over a serving plate.
9) Cover the slippers with the sauce.
10) Serve.
