Recipe Sweetcorn and onion polenta fritters

These are quick and easy to make and you can substitute the ingredients with other items like herbs, finely chopped mushrooms or diced bacon.

As I'm a vegetarian I make these and if there are any left I freeze them. Polenta can be quite bland so you need to add flavor to it.
  1. Make up the polenta, but don't have it too runny.
  2. Saute some finely diced onions.
  3. Mix in with the polenta and then add the sweetcorn.
  4. Form balls of the size of a ping pong ball and then shallow fry.
  5. Flatten out the ball as it's frying and turn several times until golden brown.
Serve hot or cold alone, or with relish or salsa on top.
