Red Curry, Yellow Curry, Green Curry, which one is your favourite? How about Thai Green Curry Chicken? I use the ready-made green curry paste, so it is a quick and easy recipe. Well balanced diet with meat and vegetables - crisp & juicy water chestnut, thai eggplants, the curry sauce is best served with rice. This green curry is not spicy at all, a mild, aromatic and kid-friendly dish!

👩‍🍳Ingredients👨‍🍳
550g chicken thigh
3 - 4 water chestnuts
5 - 6 Thai eggplants
~80g pea eggplants
1 bunch of Thai basil
2 red chili
1 tbsp coconut sugar
70g green curry paste
1 can of coconut milk (400ml)
1 tbsp fish sauce

👩‍🍳Method👨‍🍳
1. slice chicken thigh into small pieces
2. pea eggplants - remove the branches
3. Thai eggplants - slice off the top just underneath the stem, cut it into quarters and put them into water with salt quickly
4. cut water chestnut into half
5. medium heat the pan, add in 2 tbsp coconut oil
6. add in green curry paste
7. turn the heat lower to stir fry the paste, add in half can of coconut milk first, mix well
8. then add in the remaining coconut milk (if you don't want the sauce to be too creamy and heavy, you may use less coconut milk, replace with water or chicken broth)
9. when it starts to boil add in chicken thigh & cook for 3 minutes
10. then add in water chestnuts and eggplants
11. add 1 tbsp coconut sugar, 1 tbsp fish sauce, a chopped red chili
12. cover the lid and cook for 10 mins
13. add in Thai basil and stir well
