The different colours of peppers?

Is the colour of a pepper defined by the time it is picked - it's ripeness?

Or are there different seeds for different colour peppers?
 
Green peppers will go red if they're kept long enough, especially if they're not kept in the fridge. I've had that happen quite often with peppers in the UK, but not so much here, as they have to be kept in the fridge. I think yellow and orange peppers are just different varieties, although don't quote me on that.
 
According to the wonderful Wikipedia "Cultivars of the plant produce fruits in different colors, including red, yellow, orange, chocolate brown, lilac, ivory, deep purple and green" :)
 
I love peppers but don't have anywhere to grow them. They are so versatile, cooked, raw, stuff them.... yum
