That looks delicious. If you get a chance post an image of the crumb.

N.B when posting photos click on 'full image' otherwise they end up displaying as attachments - I edited them for you.
 
@Shermie why don’t you give it a try?
Try making a starter first. Equal weight of water and bread flour. About 100g each. Stir, cover it.
Next day add another 100g of water and flour. Then next day disguard 100g starter and add 100g water and 109g flour and repeat for 10 to 12 days. You will notice bubbles after 2 days and more each day. Then we can move on to the bread.
