True, i use it the least, but when I roast lamb, my house smelos wonderful, and I know it’s not just the garlic.
But I know you aren't using a reeking amount of garlic since your DH doesn't like it much (which I still can't understand).

I don’t think theres any such thing as too much garlic.
Edit- so long as we’re talking cooked and not raw garlic.
Spanish gambas al ajillo (prawns with garlic). If there's not half a kilo of garlic in it, it's not authentic. :laugh: But it must have parsley sprinkled all over it.
 
Raw garlic is definitely an acquired taste. Turkish/Greek cuisine often combine it with yoghurt; but it's still pretty heavy, and if you breathe on someone, you may need to call 911.
I think that would disgusting in my book, raw garlic and yogurt. But in California, they have garlic festival every year and they made garlic ice cream, I did go one year and it was not bad.

I tend to use semi-roasted garlic in place of raw garlic regularly. It mellows out the flavor considerably.

Roasting garlic definitely changes the flavour. It becomes sweet and unctuous. A simple bruschetta with tomato and mozzarella gets kicked up at least 2 notches if you slather the bread with roasted garlic.
