Well I started this, because I dislike it, but lots of others love it, especially Barriehie !
Let's get some tripe recipes out here and hear your experiences.

I certainly would not eat tripe or intestines. In Latin America, the land of weekly BBQ, you can occasionally find people eating "chinchurria" the lower intestine of the cow or pig. In Spain, they love their tripe; just the sight of it makes me queasy!
Did try a tarantula leg back in 2011, mind you. Nothing special, I'd say - a bit like those insects you see in Oriental and Mexican markets.

Well I’m not so sure tripes as popular in Spain as it used to be. They do sell it in the supermarket (along with every other part, spines, feet, heads etc) and it is traditional in some yucky stews but I’ve not seen it on a single restaurant menu anywhere over the last 5 years.

There are loads of Spanish restaurants in Caracas, however, and callos a la madrileña (Madrid tripe) is a classic. I've seen it a few times on Masterchef España, too. Maybe it's a regional thing.

Maybe it is but I take a week twice a year to go from the very top to the very bottom of Spain covering quite a few regions and eat in a variety of places and have never once seen tripe on the menu.
I guess the joys of the internet has meant there’s more sharing of dishes than before because a lot of the food is incredibly similar regardless of region.
They obviously still eat tripe or the supermarkets wouldn’t stock it.

I suspect Caracas and Spain have evolved in different ways over the years.
I’ve certainly seen a shift in the last 5 years in Spain where ingredients from other cultures that were impossible to get have become more readily available even in the supermarket.
But that’s food isn’t it, a constantly evolving joy.
 
I’m familiar with it, have looked for it and would try it if I ever saw it on a menu 😂
It seems there is a festival in Madrid for callos (tripe)! And its on menus there. Maybe its only on menus during the festival though!

I've never been to Spain and always wanted to go because of the food.
