Turkey Grinder:

Ingredients:

1) Turkey breast - 1 Cup
2) Anaheim pepper - 1/2
3) Onion - 1 slice
4) Mushrooms, crimini brown - 3
5) Garlic - 3 to 4 cloves
6) Thyme - 1 pinch
7) Marjoram - 1 pinch
8) Oregano - 1 pinch
9) Mozzarella cheese, shredded - 1/8 cup
10) Flour - 1 cup
11) Active dry yeast - 1/4 Oz.
12) Sugar - 1 tbspn.
13) Olive oil - 2 tblspns.
14) Water - 1/2 cup


Procedure:

-- Preparation --

1) Slice the turkey breast into 1" wide strips, 3" long.
2) Julienne slice the Anaheim pepper.
3) Quarter one slice of onion and separate the rings.
4) Dice the garlic cloves.
5) Cook the turkey, Anaheim pepper, onion and garlic in shallow pan.

-- Pizza Dough Preparation --

5) Mix the yeast and sugar.
6) Add water at 90F and mix until sugar dissolves.
7) Stir in about 2 tblspns. of flour.
8) Cover and let stand until the yeast begins to foam up.
9) Add the olive oil and remaining flour, then mix well.
10) Knead the dough.

NOTE: The dough should be elastic and soft without being sticky.

11) Form the dough into a ball and it rise (first rise).
12) After the dough rises and increases in size, punch it down.
13) Roll the dough ball into a 1/4" thick circular shape.
14) Allow the dough to rise again.
15) Preheat the oven to 350F.

-- Cook and Serve --

16) Cover the center line of the dough with the cooked turkey and vegetables.
17) Top the turkey and vegetables with mozzarella cheese.
18) Roll the dough from both sides and seal at the top.
19) Close the ends into knobs of dough.
20) Oil a baking pan and set the grinder on it.
21) Bake until the crust turns brown, about 30 to 40 minutes.
22) Plate the grinder and add any side dish.
23) Serve.
