Turkish Kilis Tava - Oven Baked Kebab


  • 500 g lamb (preferably loin or flank, medium fat content)
  • 1 eggplant
  • 4 green chilies (2 for garnish)
  • 2 red chilies or sweet paprika pepper
  • 1 head of fresh garlic
  • Parsley (1/2 cup, chopped)
  • 2 tsp salt
  • 2 tsp chili flakes
  • 1 tsp black pepper
  • 2 tomatoes (garnish)
  • 1 onion (garnish)
  1. Peel the skins of the eggplant and slice into thin strips
  2. Prepare a small bowl with salty water
  3. Soak eggplants in salty water and set aside
  4. Finely chop 2 green chilies, 2 paprikas
  5. Add fresh garlic, parsley and continue chopping until all ingredients are mixed
  6. Cut the lamb into smaller pieces and mince with a cleaver or big knife
  7. Mix the chopped vegetables with the minced lamb
  8. Season with salt, chili flakes and black pepper
  9. Continue chopping and mixing until the mixture is homogenous
  10. Pat dry the eggplants and layer on an oven tray
  11. Cover the eggplants with the kebab mixture so that the tray is almost covered with meat
  12. Score the minced meat with a knife, similar to pizza slices
  13. Roughly slice 2 tomatoes, 2 chilies and 1 onion for garnish
  14. Bake the kebab in the oven at 200°C / 390°F until the kebab is cooked but still juicy inside
  15. Serve with the tray or as kebab slices
