Sea beans salad (Deniz Borulcesi)
A classic Turkish meze served with seafood and raki, one of my favorites when I'm in Turkey for summers!

Ingredients:
  • 100 g sea beans
  • 2 cloves garlic
  • 1 lemon (juice)
  • 2 tbsp olive oil
Method:
  1. Trim to remove the tough woody parts of the lower stalks and give it a light wash to remove any grit.
  2. Blanch the see beans in boiling water for a few minutes.
  3. Cool the samphire in iced water and set aside in a serving bowl.
  4. Combine the olive oil, chopped garlic and the lemon juice in a bowl
  5. Drizzle the sauce over the samphire or sea beans and mix well.
