Recipe Tuscan Beef in Chianti

This is one of my favourite "winter warmer" dishes - its so easy to make and because its slow cooked its very forgiving in terms of timing. Leftovers also freeze really well so I often make a huge pot of it.

Ingredients:
  • 600g shin of beef (off the bone)
  • Olive oil
  • 2 large onions, finely chopped
  • 3 sticks of celery, finely chopped
  • 1 carrot, finely chopped
  • 6 fat cloves of garlic, finely chopped
  • 750ml Chianti, or other robust red wine
  • 5 tbsp tomato puree
  • 4 bay leaves
  • 150ml beef stock

Method:
  1. Heat the oven to 180C (160C if its a fan oven)
  2. Season the meat then brown all over in an oven proof casserole dish with a little olive oil, then remove from the dish
  3. Add the onions, celery, carrot and garlic - cook until softened (adding a little more oil if needed)
  4. Pour in the wine and bring to a gentle bubble, then stir in the tomato puree, bay leaves and beef stock
  5. Add the beef back to the pan, cover with a lid and cook in the oven for 4 hours or so
  6. When ready, pull the meat apart into chunks and stir through the sauce
This can also be cooked in a slow cooker: just brown off your meat and soften your veg in a frying pan, then use the wine to deglaze the pan to make sure you get all the lovely flavours.

Serve with potatoes, pappardelle or polenta - your choice!
