Recipe Vegetarian "fish" sauce

I try to be vegetarian as much as possible, but I generally don't really like regular fish sauce so I was looking for a substitute.

For the "fish" sauce you combine the following ingredients:
  • 900 ML water
  • 300 ML (Korean) soy sauce
  • Handful of dried shiitake
  • Handful of dried porchini of choice (optional)
  • 3 shallots
  • Teaspoon of tomato purree
  • Teaspoon of your favorite peppercorns (take out at the end)
  • 2 Tbl spoon vinegar (I used apple cider)
  • 2 Tbl spoon mirin
  • 4 pieces of dashima
  • 4 cloves of garlic
Method
Rough chop on all of them, cook for two hours, sieve, then let it simmer until there is roughly 1/3rd left. Done!

This sounds good! I would have thought cooking (I assume you mean simmering) for 2 hours would reduce the sauce sufficiently so that it wouldn't need simmering to reduce after sieving?

Why Korean soy sauce? My experience is that it is rather sweet (often with fructose corn syrup added)?
