Black Bean Burger

Ingredients

  • 250 g black beans
  • 150 g portobello mushrooms
  • 20 g / 2 tbsp bread crumbs
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tbsp chili flakes
  • 1 beaten egg (optional for vegan)
  • Tomato (slice for garnish)
  • Shredded lettuce leafs
  • Onions
  • Cheddar cheese (or vegan cheese)
  • Vegetable oil
Instructions
  • Wash and thoroughly drain the beans
  • Roughly chop the mushrooms and add to the processor
  • Process for 2-3 pulses
  • Add the beans breadcrumbs to processor and process for 2-3 pulses
  • Add the bread crumbs, salt, black pepper and chili flakes and give another pulse or two
  • Transfer the mixture to a large bowl
  • Whisk the egg and add to the mixture and combine
  • Make small balls and smash on a preheated and oiled pan with a spatula or burger press
  • Continue cooking until crispy on the outside
  • Add cheese on top of one patty and place one patty on top of other, so the cheese is between the patties and gets melted
  • Toast your buns and serve with your favorite sauce and ingredients
 
This looks really good. I like that it's something that I can make at a moment's notice, assuming I've bought mushrooms, since everything else is always on hand. That, and it's very healthy. What would you use for a binder if you don't use the egg?

It might be a bit unusual but I also did it with mashed avocadosv for a vegan friend instead of eggs and it worked!
I only didn't like the color :wink:
