Inspired by classic Vietnamese street food, created whilst in enforced lockdown earlier in the year. Was really happy with the end dish.

Recipe For One "Pizza"

Ingredients

1 round dried rice paper sheet (22cm)
1 tbsp Asian style chilli bean paste
1 egg
1/2 red onion, chopped
100gms deep fried whitebait (Tossed in cornflour, salt, and cayenne pepper prior to frying)
2 tbsp semi dried coconut flakes
Mayonnaise
Siracha sauce
Coconut oil

Method

In a frypan heat some coconut oil, and place 1 sheet race paper in pan, coating both sides of rice paper sheet with the oil.
In the centre of the sheet, place chilli paste and onion. Crack egg over the top, and using the back of a spoon, slowly
mix egg, onion, and paste up whilst spreading over whole rice sheet.
Over the top spread over clumps of crispy whitebait. Sprinkle coconut flakes all over.
Add mayonnaise and siracha sauce to taste over top.
Fold in half, and continue to fry on both sides until rice paper is nicely coloured and super crispy.
Serve hot!!

Why the name Pizza? Asking for a friend 😆
 
It's just what they call it. It's a relatively newer addition to the Vietnam street food scene, obviously trying to appeal to Westerners, and younger locals have seemingly embraced the dish too. They don't use whitebait though, that's my addition.
