I started a chicken aubergine onion carrot curry.

Don't really know what to call it.

Seasoned with ground coriander, smoked paprika , curry powder mix, poultry spices mix ( not too heavy on that as it is peppery and kid might not eat it),bay and fresh garlic cloves.

This will be good lunch for kid for 3 days.

Will be adding gnocchi that I want to use up and chickpeas (tin has been in cupboard for months). And some frozen spinach also wanting to use up.

I have had a word of trouble wrapping my head around this. I eat what I fid in the freezer that looks good. So I imagined myself in a situation like a nursing home or hospital or something like that.

Monday;
Breakfast, scrambled egg, piece of bacon, piece or sausage and toast. Also ^coffee and a couple of fruit juices.^, at ALL breakfasts")
Lunch, Hot ham or turkey sandwich, chips or some small fires. Some veggie, like maybe corn.
Dinner, Chicken breast or sandwich of. Real French fries. Salad.
Tuesday;
Breakfast, oatmeal, Fruit salad and juices, toast.
Lunch, small hoagie type sandwich, chips and a small portion of ice cream or sorbet.
Dinner, meat loaf with spuds and gravy, Some sort of veggie. Salad.
Wednesday;
Breakfast, Two sunny side up eggs, hash browns. Two slices bacon. One piece sausage.
Lunch, chili melt. small salad and crackers.
Dinner, choice of chicken parmesan or Alfredo. Asparagus fried in butter and garlic. Salad.
Thursday;
Breakfast, omelette with toast. Cocoa.
Lunch, deli type sandwich, choices. Mac n cheese. Small salad.
Dinner, pizza. The usual.
Friday;
Breakfast, scrambled eggs. Piece of sausage. Toast.
Lunch, chili. (melt). Salad and crackers.
Dinner, lasagna. Healthy salad. Dessert.
Saturday;
Breakfast, cream of wheat. Fruit salad.
Lunch, sandwich, salad and maybe soup.
Dinner, meat loaf with all the stuff. Salad etc.
Sunday;
Breakfast, two eggs, (sunny) three slices bacon, two slices toast.
Lunch, small burger. If it is easy to make fries. Small salad.
Dinner, well now... roast roasted all day, seared and burned a bit first to give darker aand more flavorful gravy. Roasted carrots, celery and onions from the big pot. Salad etc.

I think I did it ! LOL

I'm back to menu planning! Yes!

Tonight, probably just salad and pumpkin soufflé for dessert.

Tuscan-style ribs

Garlic-mashed potatoes
Maybe cornbread

Beef burgundy pot pie
Salad
Roasted asparagus

Shakshouka
Homemade no-knead bread

I mentioned in another thread that I'm cutting back on new recipes and focusing more on things I've made before, so I can get things in my head enough to ditch recipes altogether. The ribs up top are the only new recipe.
 
Couple of holdovers from last week due to deciding to get takeout.

Plan for tonight is shredded chicken tacos in Chipotle asado sauce with pickled onions, radishes and queso fresco. Right now, I'm still full from lunch though.

Beef stew with carrots, mushrooms and potatoes.

Fried fish with hushpuppies and roasted garlic tartar sauce, maybe chips if happen to be really hungry.

Chicken dopiaza with Jasmine or Basmati rice.

Hot dogs and my special macaroni salad.

Mushroom and spinach St. Honore per Chef Hubert Keller with some kind of homemade bread.

Picadillo with black beans and rice, and maduros.

White beans with andouille and greens, with cornbread.
 
I'm working my menu around the Cheddar Charge, so it's not very complete yet, but I've got:

Spaghetti & Meatballs (no cheddar)
Chicken Schnitzel & Macaroni-And-Cheese W/ Cheddar-Bacon Muffins
Ham Steak & Twice-Baked Potatoes W/ Cheddar Biscuits
