Pork Tenderloin Schnitzel

My bad, we had changed our minds about the three mustard tenderloin.

So far I only have a few things planned for this week.

Tuesday: Caribbean brined / grilled pork chops, Spanish rice, and maduros

Wednesday: Chicken O'Bucky, mashed potatoes

Friday: Sashimi, Unaju, shrimp tempura

Are you able to get super ripe plantains for the maduros or do you buy frozen ones? BTW, we some time go off menu, but the dish goes on the following weeks menu.
 
I'm going to try to find some fresh ripe platanos. If not, then we're having tostones. I didn't know you could buy frozen ones.
 
In the ethnic section of the freezers, at least here. Good luck finding ripe ones. Even here we have trouble, even in the Latin markets. And it usually takes a week or even longer for them to get black enough.
 
We have a few "Mexican" markets that carry decently ripe platanos, but the question is do I have time to get there.
 
The only dishes planned so far:
Tonight: Beef meatballs in tomato sauce with pasta. I only decided that a few minutes ago when I learned meat eating boyfriend of my daughter was also eating here tonight. Chopped vegan sausages in place of meatballs for vegetarian daughter
Monday: Cod and cockles in saffron sauce with forbidden rice. Something else for daughter and boyfriend.
Tuesday: Something in a filo pastry ring for Recipe Challenge.
 
I don't usually plan for the whole week, and the weather has been about 100 degrees for weeks on end here. So it will most likely be quick and easy.

Chicken Salsa Fresca. Found the recipe on the web. Basically it's seasons chicken breasts topped with pico de gallo, shredded monterey jack cheese, and baked. Corn on the cob on the side. Kind of a Mexican version of chicken parmesan.

I have some scallop and vegetable skewers I'm planning on grilling, but not sure if a marinade is a good idea.

Thursday: brunch burger, muffins and fries
Friday: we will be going shopping so nothing planned.

Slight change of plan, tomorrows dinner will be diced oven roasted spuds, onion gravy, beef in Yorkshire pudding.

Putting together my grocery delivery list. Hoping everything is in stock.

Tonight's plan is

One pan pork chops with apples and onions. I have some potato/onion pierogies in the freezer to go with, and chocolate eclairs from the bakery for dessert.

A cheater's night of Stouffer's white vegetable Lasagna, my guilty pleasure.
(Lasagna noodles, bechamel sauce, broccoli, carrots, squash, and ricotta cheese.)
Garlic bread or a small salad on the side.

Chicken Vesuvio for later in the week.

I'm dusting off my lederhosen, and straying from the menu.

Brats! Brats! Brats! The Oktoberfest Der Wienerschnitzel, commercial got to me.

Apple/potato pancakes on the side. I don't really use a recipe for Apple potato pancakes, but there's a good one on the mr.food.com site.

Sounds good - but why is it called 'white vegetable' lasagne, when the veg are green and red and orange?
