Sambal (Indonesian hot condiment)

I agree with badjak - make sambal. It lasts for ages and it's divine and there are many variants. Sambal terasi, kacang,oelek, bajak, ulek. Made lots of them about 15 years ago, but I don't know the difference really.
One thing I can say is - they're all divinely delicious and spicy.

Terasi/trassi - with fermermented shrimp paste, but you can use "normal" shrimp paste
Kacang/katjang - with peanuts
Ulek/oelek - raw, plain chili's and salt, although I have seen recipes with vinegar.
Even though it's raw, it lasts very long and is the base of most other sambals
Bajak/badjak - fried, very nice, don't know all ingredients off hand
Also sambal tomat, sambal peteh, sambal brandal, sambal tjabe rawit
Nice site is by a lady who is using an old Indonesian cookbook (in Dutch) as a base. Site is in Dutch and English +400 Indonesische Recepten

Cool! Thank you badjak! I've bookmarked this. I've a recipe for the fried one which I'm lined out to make already. I've got this shrimp paste I got at a Thai store and the owner made me smell it before she sold it to me! Smells like a cross between catfish blood bait and socks, almost like fish sauce but not quite. 👍

Yeah, that's fine to use :)
Also good in nasi goreng!

Roasting belacan for making sambal is the WORST smell I've ever had the pleasure of inhaling in my kitchen.

I was going to try and expain to Barriehie that there is something much more offensive to the nose than smelling shrimp paste :hyper:
I still have a piece of terassi/trassi (Indonesian name, Belacan is Malay).
I think I will roast it when I got guests I want to get rid off :)
I saw they sell a powdered version these days
