I really love Mexican food. Now, I make chili, tacos, enchiladas and a few other dishes quite often when I have the craving. Chili is simple, enchiladas are simple and so are tacos. What are some unique Mexican dishes that I can make at home to change things up a little?

I'm not really sure as I just make tacos and burritos myself. Every now and then I make the cinnamon swirls as well. I'm not big into pinto beans or rice in my dishes.
