What did you cook or eat today (November 2024)

I just made scrambled eggs for my wife. They were cooked thru.
As you say to each their own. :)

I too like my scrambles to be cooked through but I still want them to be moist (I usually add cream and cheese to mine). As far as fried eggs go, I don't like runny whites but I don't like solid yolks. I also don't like my eggs to be browned at all so it can be tricky sometimes...no crispy whites for me and if scrambles or omelets have browning on them I am not happy.

She wouldn't like cream added or cheese.
Not even in omelettes whereas I do.

Ok I giggled it. I'd definitely try it but making it definitely out of my league. Plus I dont have liquer. I will giggle it more intensely with local restaurants?

You don't have to use the banana liquor. In fact, you probably shouldn't since it has an intense banana flavor. Just rum, preferably dark, but clear is fine. Brennan's in NOLA is where it supposedly was invented.

From what I learned and practice, scrambled eggs are like baking cookies, you pull them when they look "still raw" and the residual heat will finish them off perfectly. If you pull cookies out of the oven when they look how you want them too, by the time they cool, they will be rock hard. With scrambled eggs, you pull them when they still look a bit "wet" and fold them over on themselves in the plate and about 2 minutes later, they will be perfect, a bit of butter overtop, some kosher salt and fresh cracked black pepper and you got some great eggs! 😋

Mine always turn out just the way I want them. Maybe not 30 years ago, but I haven't screwed them up in ages!

You cant screw scrambled eggs up.
The only time I threw some eggs out was someone ( the kommandant) didnt rotate eggs properly. When I started cooking I could tell eggs were off. I binned.

Yeah, believe me, scrambled eggs can get screwed up. It wasn't that long ago I was sick and DH made me some. I ate them to be nice and not hurt his feelings but they were dry and not very tasty.
 
We'll be having some of the leftovers from yesterday.

Had a whole bunch of sweet potatoes left, so I looked up some leftover recipes. We'll be having sweet potato biscuits with ham and pepper jelly in the near future.

I was a bit disappointed that our nephew didn't offer us some turkey to bring home. He had smoked 2 whole birds and a turkey breast, and the 2nd turkey only had a few pieces of breast meat cut out of it. Ah well. Guess I will go buy some cooked from the deli for sandwiches and stuff for now. We have a whole turkey and 2 bone-in breasts in our freezer that we will put on the smoker at some point. Probably the smallest of the bone-in breasts after (if) this cold snap relents. Temps below freezing for the highs every day are forecast for the next two weeks.

I got some farm fresh eggs, those are typically really good, from down the road and had the pan all hot and cracked an egg in. It had a rotted chick that fell out into the frying pan. So much for breakfast and it took *a minute* for the smell to go away.
