What to do with beetroot?

We bought a very nice beetroot chutney from the farmers market today, it's not too vinegary.

I try to avoid products with vinegar in but I like the sound of honey roasted beetroot and roasted beetroot

I love adding beetroot to salad with a bit of feta cheese. The two flavors work well together, in my opinion. Or try making beetroot balls, if you google "beetroot balls", you'll see plenty of simple recipes. I recommend sweet potato and beetroot balls.
