What vegetable did you cook today?

I personally have not had supper yet but I am working on it. I'm cooking slow sautéed mushrooms and corn on the con to go with my steaks this evening.

What's your choice of vegetable today?

I didn't cook any vegetables tonight. I did fix myself a nice cucumber salad. Sliced cucumbers with a raspberry ginger vinaigrette. I love cucumber salad. I could eat it everyday and not get bored with it.

Eggplant. It's great with tomato sauce on foccaccia bread!

lunch was not a cooked lunch, so I may not qualify in that sense but it was a wild rocket salad with avocado, cucumber sticks, celery sticks, spring onion sticks with olive oil & balsamic vinegar mopped up with mixed olive ciabatta and served with grated carrot & black sesame seed in mayo. I forgot to add the tomato or the red pepper!
