I came across this recipe whilst looking at some olive trees for adoption... don't ask but here is the story (https://www.cookingbites.com/threads/would-you-adopt-an-olive-tree.6628/) and since I really like wheat berries and chickpeas, the recipe appealed to me. I would have to ditch the feta being allergic to dairy which would chance the taste quite a bit, but here is the salad for everyone else.

WHEAT BERRY SALAD
Serves 6-8

Ingredients:

7 cups water
2 cups red hard wheat berries, rinsed and drained
2 tbsp red wine vinegar
Juice from 1/2 lemon
1/4 tsp garlic powder
1/2 cup extra virgin olive oil
salt and pepper, to taste
2 (15 oz.) cans chickpeas, rinsed and drained
1 large cucumber, chopped (about 2 cups)
1 cup crumbled feta
1/2 cup chopped red onion
1/2 cup chopped pistachios
1/4 cup chopped fresh parsley
1/4 cup chopped fresh mint

Directions:
  1. Place water and wheat berries in a large sauce pan. Bring to a boil, cover and reduce heat to a simmer. Cook for an hour or until tender. Drain excess water and transfer to a bowl to cool.
  2. While wheat berries are cooling, in a small bowl whisk together the vinegar, lemon juice, and garlic powder. Slowly whisk in olive oil until emulsified (or shake in a jar with a lid). Allow to sit at room temperature.
  3. Once wheat berries have cooled, toss with garbanzo beans, cucumber, feta, red onion, pistachios, parsley, and mint.
  4. When ready to serve, pour dressing over the top. Toss well and serve at room temperature.
