Victoria's Secret White Chocolate Cheesecake
Ingredients 12 oz. (340 gr)
cookies
6 tbsp. (85 gr) butter
1/2 cup (1dl) potato or corn starch
3/4 cup (1.5 dl) sugar
32 oz. (900gr) cream cheese
18 oz. (500 gr) Vanilla yogurt
1 Vanilla bean ( or, 1tsp vanilla paste, or 2 tsp vanilla extract)
5 eggs
1 organic lemon
14 oz. (400 gr) white chocolate
1 cup (2dl) whipping cream
1 lb. (500gr) strawberries, and some extra for decoration.

- Wrap 10" (250mm) baking pan with double layers of foil

Crust -
Crush your favorite cookies - Add room temperature butter and mix until well blended. - Empty into baking pan - Bake crust for 5 minutes at 400 F (200 C)
Cheesecake batter
- Mix sugar and potato, or corn starch, in mixing bowl
- Add cream cheese and mix for about 3 to 4 minutes until creamy
- Add vanilla yogurt and mix until well blended - Mix in vanilla bean, or you can use vanilla paste or vanilla extract
- Blend eggs into the mixture, one at a time, on low speed
- Add zest and juice from organic lemon. Continue to beat at low speed
- Microwave white chocolate with whipping cream for about 1.5 minutes. Check about every thirty seconds to make sure that it does not overheat.
-Mix until completely melted
- Add melted chocolate into cheesecake batter and mix at low speed for one to two minutes
- Butter sides of baking pan
- Pour cheesecake batter into baking pan and place in water bath
- Bake at 325 F (163 C) for 1 hour and 20 minutes
- Switch oven off and place spoon between oven and door to allow a slight crack and leave cheesecake in oven for 1 more hour
- Allow cheesecake to cool for two to three hours before placing in fridge overnight

Strawberry topping
- Wash and slice strawberries
- Empty strawberries into pot, save some to add after cooking
- Add sugar and leftover vanilla bean (you can substitute with1 tsp of vanilla paste, or 2tsp of vanilla extract)
- Cook for four minutes on medium heat. Stir occasionally
- Mix 2 tsp potato (corn) starch with 1 tbsp. of water
- Then pour slowly into strawberries while stirring
- Mix in the rest of the strawberries
- Let cool and the decorate your cheesecake with strawberries and whipped cream
