Who has a Boning Knife?

I had one, and broke the tip off. If I get another, it will most likely be that Victorinox. I have a few others, and they are excellent knives at a reasonable price.

Boning knives are generally somewhat flexible, to get around bones. But, don't go Rambo on them, or they snap.

Thanks for that name, I just ordered a knife from them. Nice bigun, 10". $56.95. According to the picture it is sharp all the way to the hilt, which is what I want. I don't like that when they stop grinding it at a certain point, probably thinking about idiots. Well I don't live in a world safe for idiots. (ho boy could you cut something off out in the garage, must respect machines)

But I have beeen lookig for good big knife, big because who knows what size piece it may have to cut. I think our big butchering days and were not really all that is maybe over. Except for beef tenderloin.
