Ingredients
  • 4 Fish fillets (any white fish)
  • 2 Large potatoes
  • Flour
  • Salt
  • Baking powder
  • Beer
  • Vegetable oil for deep frying
Method

Scrub (or peel) the potatoes and cut them into about 5 mm slices.

Slice the fish fillets to 10 mm thick and cut roughly to the size of the potato slices.

Blanch the potatoes for 2 minutes.

Put each fish fillet between two pieces of sliced potatoes (making a sandwich).


Put about 3 handfulls of flour in a bowl together with a little salt and baking powder. Add sufficient beer to make a thick batter whisking continuously. Allow to stand in the fridge for at least 30 minutes.

Keeping the fish "sandwiches" together, carefully dip them in the batter ensuring the surface is fully coated.

Deep fry until golden brown turning once (about 5 minutes each side). Smother with salt and vinegar and eat hot.
 
Love it and your batter looks perfect.

My wife does the batter.

She makes less of a mess.
