Deep, dark and dramatic - black tahini packs a punch. How does it taste? Its nutty, its mildly bitter and it has an edge of ash. It very easy to make if you have a good spice grinder/coffee grinder. You can use ready toasted seeds if you can get them or toast your own. Use this tahini as a sexy substitute in any recipe containing regular tahini.

3 tbsp neutral oil (I used rapeseed)

Method
- Place a non-stick pan over a high heat. Add the sesame seeds and toast for a few minutes.
- Place the sesame seeds in a spice grinder (or coffee grinder) and grind until the seeds become powdery and begin to exude oil.
- Spoon the ground sesame seeds into a small bowl and add the oil. Mix well. Add salt to taste.
- You can use this black tahini in any recipe that calls for tahini. Store in the fridge. If it thickens too much add water.
