3 Cheese Chili Cheese Fries ( All Vegan )


Description
I went vegan in 2020. That is to say, I adopted a plant-based vegan diet. No meat, no dairy, no cheese, and no eggs. The vegan diet certainly puts a large "dent" into the old cookbook. So when I saw the Recipe Challenge ingredient was cheese, I thought I would try my hand at Vegan Chili Cheese Fries.

Ingredients
1 bag Frozen Waffle fries
1 pkg Daiya Cheddar CHEEZ sauce
2 tbsp of Kate Hill Vegan Cream Cheese
2 tbsp of Miyoko Vegan MOZZ
1/3 cup Almond Milk
1 cup Vegan Chili

Method
  1. In a hot air fryer, cook waffle potatoes until crispy (15-18 minutes at 375 F)
  2. In a saucepan, add 1 pouch Daiya CHEEZ sauce, Cream Cheese, and MOZZ cheese. Add Almond Milk. Cook at low temperature while mixing with a whisk. Cheese sauce should be smooth. ( see image below )
  3. Arrange waffle fries on a large plate. Spoon half of the cheese sauce on top of the fries.
  4. Spoon on the vegan chili. Make sure you get nice coverage on the fries.
  5. Spread the rest of the cheese sauce on top of the chili.
  6. Sit back and watch it disappear!

Ingredients
- Vegan meatless beef crumbles
- Vegetable broth
- Tomatoes
- Onions
- Garlic
- Cumin Powder
- Chili Powder
- Oregano flakes
- Black pepper
- Crushed Red Pepper
- Red kidney beans
- Cauliflower (riced)
- Brewed Coffee
- Corn
- Miso

Method
- Throw all the ingredients in a crockpot and let cook for 4-6 hours.
 
This looks great. I would not have guessed it was a vegan cheese. For the vegan chili, how are the vegan beef crumbles? Anything like real beef? I think I'd try using mushrooms, unless there's a good vegan beef brand you can recommend.
