I love dukkah but not made it for years, mainly due to the price of nuts. I found almonds in the local supermarket that were a reasonable price so I made almond dukkah based on a taste.com.au recipe. 110g almonds (with shins) 80g white sesame seeds 2 tbsp coriander seeds 2 tbsp cumin seeds 2 tsp black peppercorns 1 tbsp dried thyme 1 tsp Maldon sea salt Toast the almonds in a dry skillet. Add the spices and toast until the smell lovely. Take off the heat and allow to cool. Blitz but not to a powder Add salt and thyme I sometimes take some out of the jar and mix in some fried chillies.
