Blackberry Sauce Baked Duck Breast:
Ingredients:
1) Duck breast, boneless - 1
2) Radicchio - 1/2 cup
3) Snow peas - 8 to 10
4) Celery - 1/4 Stick
5) Serrano pepper - 1 to 2
6) Pearl onions - 6 to 8
7) Garlic - 6 to 8 cloves
8) Broccoli tips - 1/4 cup
9) Black Truffles - 1/4 cup
10) Blackberries - 1/2 cup
11) Butter, divided - 3 tblspns.
12) Walnuts - 1/8 cup
13) Rosemary, divided - 1 tsp. + a pinch
14) Thyme, divided - 1 tsp. + a pinch
15) Basil, divided - 1 tsp. + a pinch
16) Allspice, divided - 1 tsp. + a pinch
17) Soy sauce - 1 tblspn.
18) Cranberry juice - 1 tblspn.
Procedure:
-- Preparation --
1) Chop up the radicchio.
2) Dice the Serrano pepper, broccoli and celery.
3) Remove the roots and tops off the pearl onions and skin them.
4) Crush the walnuts.
5) Butter the surface of the duck breast with 2 tblspns butter.
6) Dust the duck breast with a pinch of each spice.
7) Oil a baking sheet.
8) Preheat the oven to 350F.

9) Bake the duck breast until browned, about 30 to 40 minutes.
NOTE: Time is for a 1/2" thick boneless breast. Allow more time for a thicker breast.
10) Pan fry the radicchio in 1 tblspn. butter.
11) Steam the snow peas, broccoli, celery, pepper, garlic, truffles and onions.
12) Add spices and soy sauce, then simmer for 5 minutes.
13) Cover a serving plate with a bed of radicchio.
14) Cover with steamed and simmered vegetables.
15) Sprinkle on the crushed walnuts.
16) Cook the blackberries in cranberry juice to create a sauce.
17) Cross slice the duck breast into 1/4" slices.
18) Lay the duck breast on top of the radicchio and vegetable bed.
19) Spoon the blackberry sauce over the middle of the duck breast.
20) Serve.
