Easy Banana cake.
Preparation 10 mins, bake 35 to 40 mins.
Ingredients:
125g butter
15g caster sugar
1 egg, beaten
2 ripe bananas, mashed
190g SR flour
60ml milk
Demerara sugar
Method:
Grease and line 2lb loaf tin. Melt butter and sugar over a medium heat.
Remove from heat and add the mashed bananas, mix well.
Add the beaten egg. Mix well.
Stir in the sifted flour and the milk.
Pour mixture into the prepared tin, sprinkle with the demerara sugar to give a crunchy topping.
Bake at 150c, Gas Mk 3, for 35 to 40 minutes.
