Recipe Fish Scotch Eggs

I based this recipe on my usual fishcakes. These would look prettier using a soft boiled egg (but it is one of my few food fears - not seeing what I am eating).

Ingredients
  • 1 poached salmon fillets (I poach in the microwave)
  • 1 potatoes boiled and mashed
  • 2 spring onions
  • parsley
  • salt and pepper.
  • 3 Eggs
  • Panko breadcrumbs (I used gluten free
  • flour (I used gluten free)

  1. Flake the salmon and remove skin and bones
  2. Lightly mix salmon with the potato and other ingredients.
  3. Set aside to cool enough to handle
  4. Lightly poach two eggs in cling-film. Put straight into cold water
  5. Beat the third egg
  6. Pour flour and panko into separate bowls.
  7. Pat dry eggs
  8. Dip eggs in flour
  9. Flatten out fish cake mixture.
  10. Put egg in center and fold in fish cake mix to encase egg.
  11. Dip in egg then panko
  12. Deep fry until golden (takes about a minute)

Sorry about badly presented picture. I served these with salad.

What a brilliant idea to use a fishcake coating.

:scratchhead:You mean you wouldn't eat a hard boiled egg because you couldn't see the yolk? But surely in this case you are not seeing what you are eating as the egg is inside the batter...
