I got this recipe from a lovely family friend around 45 years ago. She actually served it as a "salad," but I feel it's more of a dessert.
2 cups sour cream or good quality plain yogurt
3/4 cup granulated sugar
Juice from 1 lemon
1/8 tsp salt
1 can, 20 ounces, crushed pineapple in juice, drained - some lucky person always got to drink the juice
3 large very ripe bananas, peeled and mashed
1/2 cup fairly finely chopped pecans
24 maraschino cherries, fairly finely chopped
Mash the bananas in a large bowl. Add remainder of ingredients and stir to combine well.
Place 1/2 to 3/4 cup of mixture in a silicone mold. You can also use a metal muffin tin, but line with paper or silicone liners if you do for ease of removal. Freeze until hardened, at least 4 hours.
For serving, turn out onto serving plates and let stand for about 10 minutes.
