Recipe Ginger garlic chicken

A very simple recipe.
And for a change, I did not use chili's.
Quantities are pretty flexible, so feel free to change.
I can only indicate what I did.

The frozen chickens here are always a bit of a surprise. Sometimes they come with a plastic bag in the cavity with neck, liver etc inside. I even had them with 3 necks :o_o:

1 small chicken (about 1.2 kg, incl intestines, so less than a kg in reality)
Garlic: about 2 table spoons
Ginger: equal amount to garlic
Lemon juice: about 2 table spoons as well. I like a bit of sour, so reduce if you want to
Fish sauce: 1-2 table spoons

Pound garlic and ginger in mortar & pestle till it forms a paste. Or chop very finely.
Spatchcock the chicken and make a couple of slices in the thick fleshy bits.
Put in a container with the ginger/garlic, lemon juice and fish sauce.
Leave to marinade for as long as you have time for, but no longer than say 12 hours because of the lemon juice

Prepare a charcoal or wood fire, or grill or even oven-grill and cook till nice and brown. Mine took about 40 minutes
