Aka Moreton Bay bugs, or slipper lobster.
Ingredients
3 Balmain Bugs cut length ways in half, and deveined
3 tbsp softened butter
4 cloves grated garlic
2 tbsp chopped parsley leaves
Method
Combine parsley and garlic with the butter.
Coat the flesh side of the bugs with the herb/garlic butter, keeping some in reserve.
On the bbq/grill, cook bugs for 1 minute flesh side down.
Turn so shell is facing down, and baste on remaining butter over the flesh.
Cook for another 4-5 minutes or until shell turns red.
Close lid of bbq for the last minute or so.
Serve hot with lemon wedges.
