Healthy Scotch eggs - who'd have thought?

We love Scotch eggs, but we tend to have them as a main meal with salad, rather than a snack, because they're quite high in calories and fat. However, this recipe uses lentils and lean pork for the 'wrapping,' and bakes the eggs instead of frying, resulting in a Scotch egg with just 233 calories. It looks good as well.

Do you have any other tips for making healthier Scotch eggs?
 
When I made them at school (Never made them since!), we baked them, didn't occur to me they 'should' be fried!
 
I have never fried a scotch egg, I always bake them.. and lentils on a scotch egg - no thanks
