What different kinds of milk can be used in cooking apart from cow's milk and for what dishes?
 
Generally speaking you can substitute goat's milk or other "milk" in recipes any time you want, there is of course going to be a different flavor, so that is the one concern. I don't recommend soy milk because of GMO soy and other issues but if you use almond milk that can be substituted in a lot of things without much trouble. I think it has a mild flavor. Rice milk may also be easy to substitute, but I haven't personally tried it.
 
Any milk can be used to substitute for anything provided that someone eating is not allergic to either soya or nuts.
I really have not found any issues using any alternative non-dairy milk and I have been allergic to cow's dairy for the best part of 20 years or more and allergic to all dairy milk (cow's, sheep's, goat's, buffalo etc) for well over 5 years
