Recipe Lentil and Cannellini Soup

Having had a discussion about bacon in lentil soup, I thought I would finish my bag of lentils with such a dish using ingredients I had on hand. It is wife approved so I post it here.

Ingredients

3 strips of bacon cooked and chopped
1/2 cup green lentils
2 cans cannellini beans
1 onion chopped
4 cloves garlic chopped
1 tsp oregano
3 bay leaves
1/2 cup dry white wine (I used California sauvignon blanc)
6 cups chicken stock
1 tomato diced
1/4 cup sour cream
salt and pepper to taste
grated parmesan cheese to serve

Instructions

In a stock pot fry the bacon to near crispiness and remove from pot leaving the rendered fat.
Saute the onion and garlic for a minute or two
Add the bacon, wine, chicken stock, lentils, beans, oregano, bay, sour cream, tomato, salt and pepper
Bring to a boil then lower heat and simmer for 20 minutes, stirring occasionally
Serve with a light topping of grated parmesan cheese.

Makes 8 servings. I make soup in batches and freeze what the two of us don't consume for dinner. Cut into smaller recipe amounts if necessary.

You're welcome. If I were to do it again I would replace the wine with some balsamic vinegar for the acid. Or just add the vinegar. When we defrost the next serving I'll put in a little to see how it affects the flavor. It is good as written, though.
