Recipe Limolade (Lime Marmalade)

Ingredients

1 kg Limes
400 gm Sugar
400 ml Water

Method

Slice the limes to about 3 mm and then quarter each slice. Remove any pips. Add to a large pot with the water. Bring to the boil.

Simmer, uncovered for around 40 minutes and then add the sugar.

Cook for a further 20 minutes or until the desired consistency is obtained.

Allow to cool a little then decant to sterilised jars. Refrigerate.

Hmm, it's difficult to tell from the pictures, but is it liquid enough to drink, as in lemonade (with limes, we just call it lime-ade), or is it somewhat viscous?

It's not drinkable but not easy to describe. Can you imagine ketchup straight from the fridge? It's definitely not the new style of jelly jam/marmalade. When I have it on toast tomorrow for breakfast, I'll try to take a descriptive picture.

OK, it's become far less viscous in the fridge overnight. It's now almost jelly-like. It's sweet yet still tart.
