This is spin off from the thread posted by @Rosyrain: Summer Salads. A low cal alternative to the normal potato salad with mayonnaise. This potato salad uses low fat Greek Style yoghurt in place of the mayo.

Ingredients (serves 2)
300g cooked new potatoes (skin on). I used Charlotte potatoes
2 heaped Tbsp Low-fat Greek Style yoghurt.
1 Tsp Dijon mustard (or use a mustard of your choice).
Pinch of salt
Pinch of sugar (optional)
Chopped chives
Paprika.
Method
Total cals per portion if using mayo = 250

- Mix the yoghurt and mustard, salt, sugar and chives and in a large bowl. Mix in the potatoes.
- You can of course serve it in the mixing bowl, but for a pretty presentation, decant into a another bowl and sprinkle with more chopped chives and paprika.
