Recipe Mock Clotted Cream

Mock Clotted Cream
Makes about 1 1/2 cups

Ingredients
1 cup heavy whipping cream
1/2 cup mascarpone cheese
1-2 TB sugar

Directions
In a chilled bowl, combine the cream, mascarpone, and sugar. Whisk for several minutes, or until the mixture forms a thick, smooth cream. Refrigerate until ready to use.

You've triggered a lovely memory. A friend of my dad's used to visit each winter from the West Country and bring us Clotted Cream to go with our mince pies and Christmas pudding.
These days you can easily buy it in supermarkets across the country.

Yep, clotted cream used to be a real treat, now it's an every day item. Which reminds me. Lu promised to make scones.

Regarding the mock clotted cream recipe, has anyone thought of adding a little vanilla and letting it set on a crumbly biscuit base? I think it could catch on.
