Ms. Mofet's Blue Cheese Dip/Salad Dressing

1/2 lb. (8 oz.) Blue cheese - softened
8 oz. Cream cheese - softened
16 oz. Sour cream - add more or less to adjust taste depth and/or consistency you like
2 - 4 TBSP. Bacon (Or to taste) - fried, drained, and ground fine in the food processor (This is the secret ingredient no one can guess :wink:)

Add all ingredients to the processor and pulse till well mixed.
Refrigerate for several hours or overnight.
Serve as a dip or as a salad dressing.

There is no better combination than cream cheese, blue cheese, sour cream and bacon. I have been using this forever and did not realize it was a thing.
I whisk or fork the ingredients. For a salad dressing I add a drizzle of full fat milk or cream.
 
Most recipes use mayo. I never liked the flavor of blue cheese and mayo. Not sure why, but this is what I came up with. Never added milk or cream. The sour cream keeps it kind of loose.

Instead of mayo, you can use oil - olive, vegetable, or avocado. They'll add moisture and creaminess.
