Ms. Mofet's Cinnamon Buns (Bread Machine)

For the dough:


1 C. warm milk (110°F) (or 1/2 C. whey & 1/2 C. milk)
2 eggs
1/3 C. (5 1/3 TBSP. ) butter, melted
1 tsp. salt
1/2 C. sugar
4 1/2 C. all-purpose flour
2 1/2 tsp. loose bread machine yeast (or 1 pkg. rapid rise yeast)

Variation:
1 C. raisins (or dried cherries) plumped in very warm water then drained;
1/4 - 1/2 C. chopped pecans (raw/toasted or candied); added to filling ingredients
Add at the start of second knead cycle

For the Filling:
1 C. brown sugar
2 1/2 TBSP. cinnamon
2 TBSP. - 1/4 C. butter, softened
2 TBSP. ground pecans (toasted or candied) - Or to taste - Optional

For the Icing:
1 (3 oz.) pkg. cream cheese, softened
1/4 C. (1 stick) butter
1/2 tsp. vanilla extract (or vanilla paste or vanilla powder)
1 1/2 C. confectioners sugar

If you are using a bread machine, follow the manufacturer's directions for the order to add the dough ingredients. Turn the machine on the dough cycle.

If making dough by hand or stand mixer:
Make dough through first rise then follow instructions below.

While the dough is rising, mix together the filling ingredients. Set aside.

Roll the dough out into a rectangle. (may half or quarter dough and make smaller buns).

Spread with the softened butter over entire rectangle.

Sprinkle with the filling mixture.

Beginning rolling from the short end.

Roll the dough into a log keeping it as tight as possible.

Using a serrated knife cut into 12 buns.

Place in a 9 x 13 baking dish that has been buttered (or sprayed with non-stick spray).

Tip 1: Can make dough the night before. Let the dough come to room temperature. Then proceed with instructions.

Tip 2: The unbaked buns freeze well.
Freeze buns before the second rise.
Bring to room temperature and allow to rise. Then bake.

Cover and allow to rise in a warm place until the dough has doubled, ≈ 45 min.
Preheat oven to 400 °F.
Bake for 15 to 20 minutes until golden brown.

Icing:
In a small bowl, mix the cream cheese, butter and vanilla.
Add the confectioner’s sugar.
Mix well. Pour over buns when hot out of the oven.

Tip: Can make the frosting in a mini food processor and it will come out very smooth.
