It's a bit rough and ready, my nephew is grilling squid and fish. We don't use charcoal. We collect the vine cuttings from their vineyards, also any good looking wood we can find.
I should have explained a bit more. You set the wood on fire, then when it is producing glowing embers you use a "rake" to build a bed of them and put the grill on top. To get more heat you just rake more embers.Reminds me of hearth cooking.
